With sweet potatoes being as healthy as they are for you, more and more recipes are being created using this healthy and naturally sweet health food. As far as carbs go sweet potatoes aren’t as bad as most people might think and they are definitely a better option for a cheat food than grains or most other carbohydrate option.
In this recipe, we’ll see how to make a fairly quick and easy way to make Paleo friend mashed sweet potatoes. So, let’s get started.
4-6 sweet potatoes, peeled and cut into roughly 1″ sections
1/2 cup unsweetened almond milk
1 tablespoon coconut oil
1/4 cup of 100% pure and organic maple syrup
Salt and pepper to taste (optional)
Peel and cut sweet potatoes, and place in a large soup pot filled with water.
Bring water to boil, and boil sweet potatoes until soft, about 20 minutes.
Drain sweet potatoes and place in a large bowl.
Mash sweet potatoes on low to keep from getting lumpy and “glue-like”.
Continue to mash while adding coconut oil, almond milk, and maple syrup.
Sprinkle with salt and pepper and serve (Optional).
